We stuck close to home this weekend and it felt great. Nothing set in stone just being at home and enjoying the last of this beautiful MN weather.
Saturday morning, I finally got around to peeling a bag of fresh apples Jacob's daycare mom gave me. I forgot how time consuming it is to peel and slice apples. But the outcome ... apple crisp was all so worth it! Once the crisp was done baking, we made a short trip out to see Jacob's daycare parents. They were staying out at a campground strictly for power plant employees and they wanted to show us the sites to see if we would be interested in joining them next camping season. As long as they are the ones setting up the reservations, we are able to stay there. From the highway, you would never guess 40+ campsites are hidden behind the grove of trees. Each site was huge! Enough to have 2 good size campers and space for tents too. And the best part, you really couldn't see any other sites around you. Jake had a blast exploring.
We cut our visit to a couple of hours because Kendall put a chicken on the rotisserie part of our grill. It was perfect timing when we got home. The chicken was cooked to perfection. :) Once supper was ate and cleaned up, we got in the car once again and drove to Palmer, a small town down the road from us. They were having their town celebrations and our neighbor Pat along with his band members were playing that night. We pulled up as close as we could along the highway and listened to a few songs. Yesterday, I took advantage of the warm weather and baked 2 batches of brown bread (8 loaves). With the bright and warm sun, it cut my rise time down to half. What normally would take 12 hours to do, I was able to finish 3 hours earlier! The baking made our house smell delicious. Thank goodness we went on a bike ride last night. All those calories from the apple crisp and bread were to good to say no too.
